Cultivation and Processing
Grown at elevations between 1,000 and 1,300 masl, Brazilian coffee benefits from a combination of warm days, cool nights, and well-defined seasons that support even cherry development. Farms are typically medium to large in size, with a strong focus on efficient harvesting and processing practices.
For this washed lot, ripe cherries are selectively harvested, pulped, and fermented to remove mucilage before being thoroughly washed and dried. This method enhances the coffee’s natural sweetness while bringing forward a cleaner acidity and more transparent flavour profile compared to traditional natural processing.
Common varietals include Mundo Novo, Catuai, and Bourbon, all of which contribute to the cup’s body, sweetness, and balance.
