With two decades of hands-on experience in coffee production, Edwin's passion for specialty coffee is palpable, as evidenced by his decade-long dedication to studying and experimenting with coffee cultivation.
Edwin's commitment to excellence has garnered international acclaim, with his high-quality coffees earning recognition in prestigious competitions worldwide. Beyond his role as a farmer, Edwin also lends his expertise as a coffee processing consultant, certified Q-grader, and esteemed judge for the Colombian Cup of Excellence competition.
Drawing inspiration from the craft beer industry, Edwin has developed a unique co-fermentation technique that sets his coffees apart. By introducing ingredients such as hops and dehydrated fruits into the fermentation tanks, Edwin orchestrates a symphony of flavours that harmonise with the natural fermentation process. This meticulous approach, characterised by dual fermentations and a discerning selection of cherries, results in coffees with exceptional and distinctive profiles.
