Unveiling the Story
Nestled in Herrera, Tolima lies Finca Monteverde, a sprawling 15-hectare estate dedicated to cultivating a diverse array of coffee varieties such as Wush Wush, Red or Yellow Bourbon, Geisha, and Mocca. At its helm is Gilardo Gutierrez and his family, boasting a legacy of over 70 years in coffee cultivation, now spanning five generations. A decade ago, a transformative shift occurred under the stewardship of their three children, all fervent Q Graders and processors, who spearheaded a new era focused on producing exotic coffee varieties, supported by their parents' expertise. Among them, Newerley Gutierrez pioneered innovative techniques in processing Wush Wush, earning him the moniker "Mr. Wush Wush."
Exquisite Rarity: The Wush Wush Journey
Wush Wush, an exceedingly rare variety originating from the Keffa region of Ethiopia, found its way to Colombia through the efforts of Finca Monteverde. Thriving in Colombia's environmental conditions, this elusive variety underwent meticulous care and attention to detail. Harvested at optimal ripeness, the coffee cherries are meticulously sorted and processed using natural yeast and dry aerobic oxidation techniques. Temperature and pH levels are carefully monitored, with the coffee mass being cooled using spring water once it reaches 35 degrees Celsius. Over a span of 100 hours, the coffee undergoes aerobic fermentation, with regular stirring to ensure uniformity. Following this, the coffee is dried for 29 days in a meticulously controlled environment, culminating in a truly exceptional product.
