From the volcanic highlands of El Salvador comes Emilio Lopez Diaz La Cumbre SL-34 Natural, a coffee that embodies heritage, craftsmanship, and innovation. This exquisite lot is the result of a partnership between Emilio López and Jose Roberto Santamaría—two coffee producers from multigenerational coffee-growing families. Together, they formed Odyssey Coffees, a company bridging El Salvador and Portland, dedicated to producing and exporting some of the finest coffees in the world.
The Farms Behind the Coffee
Odyssey Coffees operates across six farms: Finca Las Isabellas, Tapantogusto, Las Piedras, La Cumbre, El Manzano, and Ayutepeque. Emilio and Jose worked tirelessly to align farming methods across their estates, ensuring quality, sustainability, and consistency.
Finca La Cumbre: A High-Altitude Marvel
Nestled on the highest-altitude land within the larger Finca El Manzano, Finca La Cumbre benefits from ideal growing conditions. Originally established in 1872, Finca El Manzano has been in Emilio López’s family for generations. In 2005, Emilio revitalized the farm by planting new varietals and constructing an on-site wet mill.
Processing Excellence
Selective handpicking ensures only the ripest cherries are harvested. These cherries are transported to El Manzano’s wet mill, washed, and laid out on patios to dry. Over 12 to 14 days, they are frequently raked to guarantee uniform drying, developing a rich, fruit-forward flavor profile.
El Salvador’s Coffee Legacy
Once the fourth-largest coffee producer worldwide, El Salvador is renowned for its high-quality Bourbon and Pacamara varietals. The country’s prolonged dry season provides optimal conditions for natural processing, making it an ideal location for specialty coffee cultivation.
While national production has declined over the past two decades, a new generation of quality-driven producers is emerging. These innovators are pushing boundaries through experimental processing methods and varietal development, ensuring El Salvador remains a key player in the specialty coffee industry.
