About the Coffee
This organic decaf is produced by smallholder farmers in the southern states of Chiapas and Oaxaca, two of Mexico’s most celebrated coffee-growing regions. Farms here are typically 2–5 hectares in size and cultivated using traditional, organic practices, often intercropped with maize, bananas, and shade trees that preserve biodiversity.
Cultivation and Processing
Coffee in Chiapas and Oaxaca thrives at elevations between 1,200 and 1,700 masl, where fertile volcanic soils and cool mountain microclimates create ideal conditions for slow cherry maturation and complex flavour development. Farmers grow mostly Typica, Bourbon, and Caturra varietals, which are selectively hand-harvested, fully washed, and sun-dried on patios or raised beds.
After harvest, this lot is shipped to Canada, where it undergoes the Swiss Water Process™ decaffeination method. Using only pure water, time, temperature, and Green Coffee Extract (GCE), the process removes 99.9% of caffeine while preserving the beans’ natural flavour integrity and origin character.
The Legacy of Coffee in Mexico
Coffee has been cultivated in Mexico since the 18th century and is deeply tied to rural livelihoods, especially among Indigenous communities in the south. Mexico’s commitment to organic and sustainable practices has made it a leading supplier of certified coffees for the global market.
