COFFEE PROFILE

A smooth and approachable cup that showcases the vibrant character of Mexico’s high-grown Arabica, with aromas of cocoa and soft spice. Flavours of milk chocolate, almond, and gentle citrus are complemented by a medium body and clean finish. Naturally decaffeinated through the Swiss Water Process™, this coffee delivers the essence of Mexican origin without the caffeine.

About the Coffee

This decaf is sourced from smallholder farmers across the southern states of Chiapas and Oaxaca, two regions renowned for their high-quality Arabica. Farms are typically 2–5 hectares in size, cultivated using traditional practices that prioritise care for the trees and the cherries. While not certified organic, these farms maintain careful management of soils and intercropping to support healthy, balanced production.

Cultivation and Processing

Coffee in Chiapas and Oaxaca grows at elevations between 1,200 and 1,700 masl, where volcanic soils and cool mountain microclimates support slow cherry development and complex flavour formation. Farmers cultivate mostly Typica, Bourbon, and Caturra varietals, hand-harvested and fully washed before being sun-dried on patios or raised beds.

After harvesting, the coffee is shipped for Swiss Water Process™ decaffeination, which uses only water, time, and temperature to remove 99.9% of caffeine while preserving the bean’s natural flavours and origin characteristics. This chemical-free method ensures a clean, expressive cup that retains Mexico’s signature clarity and balance.

The Legacy of Coffee in Mexico

Coffee cultivation has been central to rural livelihoods in Mexico since the 18th century, particularly among Indigenous communities in the south. While challenges such as leaf rust, price volatility, and limited infrastructure persist, farmers have maintained quality and resilience through cooperative networks and careful management. Mexican decafs like this one allow coffee lovers to enjoy the country’s distinctive high-grown flavours without compromise.
